I probably posted this before on my old site, but these are the EASIEST things to make. I first came across these two ingredient (for the base recipe, anyway) cookies online somewhere a few years ago and started making them on a regular basis, adding my own flare to them (well, sort of, anyway). Just this past weekend, my son asked me about them as he’s never seen me make them. Now he wants to try them too, so I’ve made some just for him. It’s really easy, all you need are very ripe bananas and rolled oats. My version also includes instant coffee, vanilla and cacao nibs (as in the 100% stuff).
Ingredients:
2 medium to large bananas (banana bread ripe)
1 1/2 heaping cups of rolled oats
Splash of vanilla extract (optional)
1 - 2 teaspoons of instant coffee (optional)
2 tablespoons cacao nibs (optional)
The add-ons are endless, including nuts, dried fruit, seeds, etc…..
Directions:
Peel and mash the bananas
Add the oats. Mix
Add remaining ingredients if you’re using them and mix
In a lined baking sheet, add the mixture 1 1/2 tablespoons or so at a time. This should yield 10-14 cookies, depending on size. You really don’t need to make that much space as there’s no rising agent so the cookies will not spread.
Bake for 15 minutes, set aside to cool.
I usually keep these cookies in the fridge and they’ll last about two weeks. You can also freeze them, but you’ll want to thaw them in the fridge before you eat them.
