Now that we’re heading deep into the holiday season, it’s time to make some COOKIES!!!! This past weekend, I made the dough, and will be baking them the following weekend. It’s going to have an applesauce and oat base again, sweetened only with some sugar toppings. I’m not going to bother to decorate since I’m, well, just not great at it. Since I didn’t post the recipe last year, I thought I would now - you really only need two ingredients for the base recipe!!!!!
3/4 cups of applesauce (I’m using apple-strawberry)
Approx 2 cups of oat bran
Mix until it forms into a dough. You can make these cookies immediately or freeze for later. Bake at 350 for 15-18 minutes. Decorate as you like (or don’t decorate!)
For mine, I also added about 1/2 teaspoons of a baking seasoning mix that includes ginger, cacao, nutmeg and clove to make it a bit more seasonal. I rolled the dough out and seasonal cookie cutters. I also sprinkled a ginger and turmeric sugar on top before baking. This cookie isn’t really sweet at all, so if you DO want a real cookie taste, use slightly less applesauce and add some maple syrup!
